SCD Granola

Feel free to mix up varieties of nuts

Ingredients:

  • 1 c raw almonds
  • 1 c raw cashews
  • 1/2 c shredded unsweetened coconut
  • 1/3 c melted coconut oil
  • 1/4 c maple syrup or honey
  • 1 tbsp cinnamon
  • 1 tbsp vanilla
  • 5-6 pitted dates (cut into pieces-scissors make this easy)

Instructions:

  • Crush nuts in a food processor or blender until coarse.
  • Mix in other ingredients.
  • Spread on a baking sheet that has been greased or lined with parchment paper.
  • Bake at 350F until brown and crispy, stir every 5 min or so to ensure everything gets toasted
  • Mix in dates towards the end (once things start to brown).
  • Let cool
  • Transfer into an air tight container and kept in the fridge.
